Definitely could do that. Just need a high speed camera and someone familiar with human emotional responses. Not any one their incompetents or intelligence incompetents. Watch for unconscious response to stimulus before the mind gets a chance to consciously respond. Would go against their desire to torture people. Only beatable with self-torture like hallucinogens or paranoia or brain damage.
